Champagne Billecart-Salmon was founded in 1818 by Nicolas-François Billecart and Elisabeth Salmon in Mareuil-sur-Aÿ, near Epernay. Still family-run, it is currently led by seventh-generation Mathieu Roland-Billecart. In 2016, after 30 years, Chef de Cave François Domi retired, passing the role to Florent Nys, who joined the company in 2005. The vineyards are managed by Denis Blée, with key members of the family, including François, Antoine, and Jean Roland-Billecart, on the tasting committee. By 2020, production expanded to include 100 hectares of owned vineyards and 200 hectares of managed vineyards from 40 crus. The house became certified High Environmental Value in 2017 and is now herbicide-free, with 10 hectares in organic conversion.
Billecart-Salmon's prestigious Elisabeth Salmon Rosé, created in 1988, is made with less than 10% red vinified Pinot Noir from old vines in Valofroy, Mareuil-sur-Aÿ. The wine is released when the head winemaker determines it is ready, not necessarily in chronological order.
