Grongnet Extra Brut - Carpe Diem

 

Extra Brut "Carpe Diem" champagne, non-vintage from Champagne Grongnet, situated in Etoges, Champagne which is in Côte des Blancs. Known for their extraordinary chardonnay. The champagne opens up with strong aromas of yeast and brioche. Concentrated both aromatically and in terms of flavor, it offers layers of citrus peel, chalk, green apple, slight nuttiness, toasted brioche, & chalky minerality. The low dosage let's the fruit speak for itself.

The bottle is closed with yarn and wax. This was the original way to close a bottle, but they stopped using that method in the 1930's as the mice were eating it. And it opened the bottles.

Bonus info: Blocked malolactic fermentation.
